for the back-splash and other counter areas with unknown wall finishes, I like using "adjustable zip boxes" by carlon. very easy to adjust depth later in construction, turning one screw slides them in or out on slides. people can never make up their minds on wall finishes!
Is there a finished video of this kitchen? This is a similar layout to my kitchen and want to do a full open knee wall
