I only use all copper. Nothing better than just sweating pipe. Pex is garbage
Why were the brass drop-ears used instead of copper stub-outs with which you sweat or use a compression stop? (I have a similar project and see there's more than one way to go about this.)

DROP EAR! I didn't know what I was looking for and when I was at the store I kept finding sink shutoff valves that connected directly to PEX… I certainly didn't want plastic tube sticking out of the wall. So glad I found this video!
what about the drain pipe?
prefer uponor expansion fittings, they have plastic rings so no chance of metal corroding the pipe
Pex recommends two (2) crimps at opposing 180 degrees then checking the crimp with the check tool. If the tool slides freely around the crimp, you are done. If it "binds" up anywhere, crimp again. I just got done plumbing my bath remodel and it was awesome.
